– 1 large eggplant
– 2 red bell peppers
– 2 yellow onions
– 6 garlic cloves
– 3 large tomatoes
– 2 zucchinis
– 2 tsp dried thyme
– Salt
– Black pepper
– Olive oil

2. Cut the eggplant, bell peppers, and onions into small cubes. Mince the garlic cloves.

5. Add bell peppers and onions into the skillet and cook for another 5 – 7 minutes.

6. Add the minced garlic and cook for another minute before adding diced tomatoes.

7. Next, add the zucchini and mix thoroughly.

8. Add dried thyme, salt, and black pepper to taste.

9. Let everything cook for about 5 minutes before transferring the mixture into an oven-safe dish.

10. Drizzle olive oil over the mixture before putting it into the oven to bake for about 25 – 30 minutes.
