Classic Ratatouille Recipe

Ratatouille

Ingredients:

  • 1 large eggplant, diced
  • 2 medium zucchini, diced
  • 2 medium yellow squash, diced
  • 1 large red bell pepper, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, add the eggplant, zucchini, yellow squash, red bell pepper, onion, and garlic.
  3. Add the canned tomatoes on top and drizzle with olive oil.
  4. Sprinkle the dried basil, thyme, oregano, salt, and black pepper on top and mix everything together.
  5. Cover and bake for 45 minutes.
  6. Uncover and bake for an additional 15-20 minutes, or until the vegetables are cooked through and slightly browned on top.
  7. Serve hot and enjoy!

Ratatouille

Ingredients:

  6. Top the vegetables with the diced tomatoes.
  7. Cover the dish with foil and bake for 45 minutes.
  8. Remove the foil and cook for an additional 15-20 minutes, or until the vegetables are tender and lightly browned.
  9. Serve hot and enjoy!
