Ratatouille Recipe
Now, let’s get to the ingredients:
- 1 large eggplant, peeled and chopped
- 3 large zucchini, chopped
- 2 red bell peppers, seeded and chopped
- 2 yellow onions, chopped
- 6 cloves garlic, minced
- 1 can (28 ounces) diced tomatoes
- 1 tablespoon olive oil
- 2 teaspoons dried thyme
- Salt and pepper, to taste
Instructions:
- Preheat oven to 375°F.
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add the onions and cook for 5 minutes or until they are translucent.
- Add the garlic and cook for 1 minute or until fragrant.
- Add the eggplant, zucchini, and bell peppers to the pot and cook for 8-10 minutes or until they are lightly browned.
- Add the canned tomatoes to the pot and stir everything together.
- Season with thyme, salt, and pepper to taste.
- Transfer the mixture to a 9×13 inch baking dish.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for another 15-20 minutes, or until the top is lightly browned.
