Have you ever wanted to make ratatouille, just like Remy from Disney’s famous animated movie did? Well, today is your lucky day! We have found two amazing ratatouille recipes that are sure to impress your friends and family.
Ratatouille Recipe #1
Ingredients:
- 1 large eggplant, peeled and diced
- 2 medium zucchinis, diced
- 2 red or green bell peppers, diced
- 1 large onion, diced
- 4 large, ripe tomatoes, peeled and chopped
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 2 teaspoons dried herbs de Provence
- Salt and pepper, to taste
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the eggplant and cook until just about tender, stirring occasionally, about 5 minutes.
- Add the zucchini and onion to the pan and cook, stirring occasionally, until the vegetables are just tender, about 10 more minutes.
- Stir in the tomatoes, peppers, garlic, herbs and salt and pepper to taste.
- Cook the ratatouille over medium-low heat, partially covered, for about 10 minutes more or until vegetables are tender but still intact.
Ratatouille Recipe #2
Ingredients:
- 1 large yellow squash, peeled and diced
- 1 small zucchini, diced
- 1 small eggplant, diced
- Kosher salt, to taste
- 1/4 cup olive oil
- 1 large red onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1 (28-ounce) can whole plum tomatoes, drained and crushed by hand
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh parsley leaves
Instructions:
- Preheat the oven to 375 degrees F.
- Toss the yellow squash, zucchini, and eggplant with 1 1/2 teaspoons salt and 1/4 cup olive oil.
- Spread the vegetables in a single layer on a baking sheet and bake until tender, stirring halfway through, about 20 minutes.
- Meanwhile, in a large skillet, heat the remaining 2 tablespoons olive oil over medium-high heat until shimmering.
- Add the onion and garlic and cook, stirring occasionally, until translucent, about 5 minutes.
- Add the bell peppers and cook, stirring occasionally, until tender, about 8 minutes more.
- Stir in the tomatoes, basil, parsley, and salt to taste and cook until slightly reduced, about 10 minutes more.
- Serve the ratatouille topped with the roasted vegetables.
