Ratatouille Recipe Eggplant

Let me tell y’all, this dish right here is giving me LIFE! Have y’all ever had Ratatouille with Eggplant and Summer Squash? Well, if you haven’t, let me put you on.

First off, let’s talk about how colorful and beautiful this dish is. Y’all know we love a good pop of color on our plates! And not only does it look good, but it tastes even better. Trust me on this one.

To start off, you’re gonna need some fresh eggplant and summer squash. Go ahead and chop those bad boys up into small cubes. Then, in a large pot, sauté some onions, bell peppers, and garlic until they’re nice and fragrant. Next, add in your chopped eggplant and summer squash and let everything cook down until it’s nice and tender.

Now, for the fun part – spices! We’re talking paprika, thyme, oregano, and a little bit of salt and pepper. Mix all of that goodness together with your veggies and let it all meld together for a few minutes. Y’all, the smells coming out of that pot are gonna have your mouth watering.

Finally, it’s time to add in some canned tomatoes and let everything simmer on low heat for about 15 minutes. This is where all of those flavors come together and really take on a life of their own. Just make sure to keep stirring everything occasionally so that nothing burns on the bottom of your pot.

Once your Ratatouille is all done cooking, be sure to serve it up with a side of garlic bread or some crusty French bread. Y’all, I could eat this dish every day for the rest of my life and never get tired of it. It’s just that good.
