Next, throw in your zucchini, yellow squash, and red bell pepper. Cook for another 5 minutes, then pour in your crushed tomatoes. Add in your oregano, basil, salt, and pepper, then reduce heat and let it simmer for about 20 minutes.

Ratatouille: How to Make the French Dish

Ingredients:

  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 zucchini, sliced in rounds
  • 1 yellow squash, sliced in rounds
  • 1 eggplant, sliced in rounds
  • 2 red bell peppers, sliced in strips
  • 1 can (28 oz) crushed tomatoes
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat your oven to 375°F.
  2. In a large sauté pan, sauté your onion and garlic in olive oil over medium heat until they’re translucent.
  3. Add in your zucchini, yellow squash, eggplant, and bell peppers. Continue to cook over medium heat for 10 minutes, stirring occasionally.
  4. Pour in your crushed tomatoes, salt, and black pepper, and let everything simmer for another 15 minutes.
  5. Transfer everything to an oven-safe dish and bake for 25-30 minutes.
  6. Serve hot, garnished with fresh herbs if desired.
