Ratatouille Pizza
Ingredients
- 1 pre-made pizza crust
- 2 cups sliced eggplant
- 1 cup sliced zucchini
- 1 red bell pepper, sliced

- 1 tsp dried oregano

- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 425°F. Grease a pizza pan.
- Heat the olive oil in a pan over medium heat. Once hot, add the onions and garlic and sauté until the onions are translucent.
- Add the zucchini, yellow squash, eggplant, tomato, salt, black pepper, rosemary, and thyme to the pan. Cook until the vegetables are tender and the moisture has evaporated, stirring occasionally.
- Spoon the pizza sauce onto the pizza crust, spreading it into an even layer.
- Spread the vegetable mixture on top of the sauce. Top with the shredded mozzarella.
- Bake for 12 to 15 minutes or until the cheese is melted and bubbly. Let cool for 2 to 3 minutes before slicing and serving.
