Today, we are going to cook a delicious dish that I have been craving for a while now. It’s called Ratatouille and believe me, it’s easier to make than you might think. It’s a perfect dish that is gluten-free and vegan, which makes it ideal for everyone to enjoy. And the best part? We can make it in our Instant Pot.
Instant Pot Ratatouille
Ingredients:
- 1 eggplant, cubed
- 1 zucchini, cubed
- 1 red bell pepper, chopped
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes, drained
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper
- Olive oil
Instructions:
- Turn on your Instant Pot to “Sauté” mode and add some olive oil.
- Add the onions and garlic, and sauté until the onions are translucent.
- Add the chopped peppers, eggplant, and zucchini, and sauté for 5 minutes.
- Add the canned tomatoes, bay leaves, dried thyme, salt, and pepper. Give it all a good stir.
- Close the lid and turn the Instant Pot to “Manual” mode, and set it for 5 minutes.
- Once the timer goes off, let the pressure release naturally for 5 minutes, then quickly release the remaining pressure.
- Open the lid and give it a good stir.
- Serve hot with some crusty bread or over some cooked quinoa. Enjoy!
Another version of Ratatouille
Ingredients:
- 1 eggplant, cubed
- 1 zucchini, cubed
- 1 red bell pepper, chopped
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes
- 1 tbsp olive oil
- 1 tsp chopped rosemary
- 1 tsp chopped thyme
- 2 bay leaves
- Salt and pepper
Instructions:
- Preheat your oven to 375°F.
- Heat some olive oil in a skillet over medium-high heat. Add the onions and sauté until they are translucent.
- Add the garlic, eggplant, zucchini, and red bell pepper. Cook for 8-10 minutes, until everything is tender, stirring occasionally.
- Stir in the diced tomatoes, chopped rosemary, chopped thyme, bay leaves, salt, and pepper. Bring everything to a simmer.
- Transfer the mixture to a baking dish and place in the preheated oven.
- Bake for 25-30 minutes, until everything is tender and cooked through.
- Remove from the oven and let sit for a few minutes before serving. Enjoy with some crusty bread or over some cooked quinoa.
