  3. Add the bell peppers, zucchini, and eggplant and cook until the vegetables are just beginning to soften, about 5-7 minutes.
  4. Stir in the smoked paprika, dried thyme, dried basil, salt, and black pepper until the vegetables are evenly coated in the spices.
  5. Transfer the vegetable mixture to a baking dish and spread it out evenly. Pour the drained tomatoes over the vegetables.
