Oh hey there y’all! Today, I wanna share with you my favorite recipe for a dish that is just bursting with flavor and is so darn good, you’ll be lickin’ your plate clean – Ratatouille! This French classic is a hearty vegetable stew that’s perfect for a cozy dinner with your loved ones or when you’re just in the mood for some comfort food.

Easy French Ratatouille

For this recipe, you’ll need:

1 large onion, sliced
1 large eggplant, cubed
2 bell peppers, chopped
4 small zucchinis, sliced
2 cloves of garlic, minced
1 can of crushed tomatoes
1 tsp of dried thyme and basil
Salt and pepper to taste

Instructions:

Heat some olive oil in a large pot over medium heat and sauté the onions until they’re soft and translucent.
Add the eggplant and bell peppers and cook for about 5-7 minutes or until they start to soften.
Add the zucchinis, garlic, and dried herbs and cook for another 5 minutes.
Pour in the can of crushed tomatoes and season to taste with salt and pepper.
Let the ratatouille simmer for about 20 minutes or until all the veggies are tender, stirring occasionally.
Serve the ratatouille hot with some crusty bread or over some brown rice.

Creamy & Smoky Ratatouille Recipe

For a more indulgent and complex flavor, try this creamy and smoky ratatouille recipe instead!

You’ll need:

1 large onion, chopped
2 red bell peppers, sliced
1 large eggplant, cubed
3 large zucchinis, sliced
2 cans of diced tomatoes
2 garlic cloves, minced
1 cup of heavy cream
3 tbsp of smoked paprika
Salt and pepper to taste

Instructions:

Heat some olive oil in a pot over medium heat and sauté the onions and peppers until they’re soft and fragrant.
Add the eggplant and zucchinis and let them cook until they’re tender.
Stir in the garlic and smoked paprika, and cook for another minute.
Add the cans of diced tomatoes and season to taste with salt and pepper. Let the ratatouille simmer on low heat for about 20 minutes.
Pour in the heavy cream and stir well.
Let the ratatouille cook for another 10 minutes or until the sauce has thickened.
Serve the ratatouille hot with some freshly chopped parsley on top.
