Pesto alla Genovese is a dish that always reminds me of home. It’s a classic Italian recipe that I learned from my grandmother, who hailed from Genoa. Every time I make it, I can’t help but think of her and the many meals we shared together.
To make this delicious dish, you’ll need a few ingredients. Here’s what you’ll need for the recipe:
– 2 cups Basil leaves, tightly packed
– 1/2 cup Parmigiano Reggiano, freshly grated
– 1/3 cup Pecorino Romano, freshly grated
– 1/2 cup Pine nuts, toasted
– 3 cloves Garlic
– 1/2 tsp Salt
– 1/2 cup Extra virgin olive oil
To start, gather all of your ingredients. Then, in a large mortar, crush the garlic and salt together until the garlic is finely chopped. Add the pine nuts and continue to grind until you have a fairly smooth mixture. Add the basil leaves a handful at a time, working the leaves in a circular motion with the pestle until all the leaves are crushed and combined.
Next, add the grated Parmigiano and Pecorino cheese in small handfuls, grinding and stirring with the pestle until all the cheese is combined. Slowly pour the olive oil into the mortar, stirring and grinding constantly until the mixture is smooth and well combined.
Once you have your delicious pesto alla Genovese, it’s time to serve it up! Here’s what you’ll need to do:
Ingredients:
– Your freshly made pesto alla Genovese
– 1 pound Trofie pasta
– Sea salt
Instructions:
1. Bring a large pot of salted water to a boil. Add the Trofie pasta and cook for 10-12 minutes, or until al dente.
2. Drain the pasta, reserving 1/4 cup of the cooking water.
3. In a large bowl, toss the pasta with the reserved cooking water and a generous spoonful of pesto.
4. Serve immediately, topped with a spoonful of additional pesto and a sprinkle of sea salt.
