Recipes Cheeseburger Soup

Ingredients

• 1 pound ground beef
• 1 large onion, chopped
• 3 cloves garlic, minced
• 4 cups chicken broth
• 4 cups peeled and cubed potatoes
• 1/4 cup all-purpose flour
• 2 cups shredded cheddar cheese
• 1 cup milk
• 1/2 cup sour cream
• Salt and pepper to taste
• Croutons (optional for topping)

Instructions

• In a large pot, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink. Drain any excess grease.
• Add the chicken broth and cubed potatoes to the pot, and bring the mixture to a boil. Reduce the heat, and allow the mixture to simmer until the potatoes are tender, about 15-20 minutes.
• In a separate bowl, whisk together the flour and 1 cup of milk until smooth. Add the flour mixture to the pot, and stir until the soup thickens up.
• Stir in the shredded cheese and sour cream to the pot, and continue to stir until the cheese is melted and the soup is heated through. Add salt and pepper to taste.
• (Optional) Top with croutons, additional cheese, or even some chopped up bacon for an extra flavor boost.
