This traditional Korean dish is made with fresh cabbage and a blend of spices that create a perfect balance of sweet, salty, spicy, and sour flavors. It’s perfect as a side dish or as a topping for your favorite Korean dishes.
Jinjja Kimchi Daun Bawang
Before we dive into the recipe, we want to introduce you to our favorite brand of kimchi, Jinjja Kimchi Daun Bawang. This brand makes a delicious non-spicy kimchi that is perfect for those who can’t handle the heat. Their 800g package contains fresh and high-quality ingredients that give the kimchi a delightful crunch.
Ingredients:
- 1 large head of Napa cabbage (about 2-3 pounds)
- 1/2 cup sea salt
- 1/4 cup sweet rice flour
- 1/4 cup sugar
- 1/2 cup fish sauce
- 1/2 cup hot pepper flakes
- 1/2 cup water
- 1 bunch of scallions, cut into 1-inch pieces
- 1 medium carrot, julienned
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 1-inch piece of ginger, peeled and grated
Instructions:
- Wash and chop the cabbage into bite-sized pieces.
- In a large bowl, dissolve sea salt in 12 cups of water.
- Submerge the cabbage in the saltwater making sure it’s completely covered.
- Let it sit for at least 2 hours, turning every 30 minutes.
- Rinse the cabbage with cold water and drain.
- In a small saucepan, mix the sweet rice flour and sugar with 1 cup of water.
- Cook over medium heat, stirring constantly until it thickens.
- In a separate bowl, mix the fish sauce, hot pepper flakes, water, garlic, ginger, scallions, carrot, and onion.
- Add the cooked sweet rice flour mixture to the spice blend.
- Using gloves, massage the spice blend into the cabbage, making sure every piece is coated.
- Transfer the cabbage to an airtight container and press it down so it’s completely submerged in liquid.
- Leave the container at room temperature for 1-5 days depending on your preference of fermentation level.
- Once it’s fermented to your liking, store it in the refrigerator.
