Instructions:
1. In a large bowl, mix the cabbage pieces with sea salt and leave it for 2-3 hours.
2. After 2-3 hours, rinse the cabbage pieces with cold water at least 3-4 times.
3. In a separate bowl, mix the glutinous rice flour with 1 cup of water and cook it over medium heat for 3-4 minutes until it thickens.
4. Add sugar, Korean chili powder, fish sauce, garlic, ginger, scallions, and shredded carrots to the thickened rice flour mixture.
5. Mix well and add in the cabbage pieces to the mixture.
6. Using your hands, massage the cabbage pieces with the mixture.
7. Transfer the kimchi into an airtight container and let it ferment for 3-4 days at room temperature.
8. Once the kimchi is fermented, store it in the refrigerator for further use.
Our second recipe is a simpler version of kimchi that can be made using easily available ingredients. Here are the ingredients you will need:
– 1 cup of cabbage, finely chopped
– 1/4 cup of Korean chili flakes
– 1 tablespoon of minced garlic
– 1 tablespoon of grated ginger
– 2 tablespoons of fish sauce
– 1 teaspoon of sugar
– 2 sliced green onions
Instructions:
1. In a large mixing bowl, mix all the ingredients except cabbage and green onions.
2. Add in the chopped cabbage and sliced green onions to the mixture.
3. Using your hands, mix the ingredients well and massage the cabbage with the mixture.
4. Transfer the kimchi into an airtight container and let it ferment for 2-3 days at room temperature.
5. Once fermented, store it in the refrigerator.
