Chorizo Sausage Stir Fry
Ingredients
- 2 tablespoons olive oil
- 1 pound chorizo sausage, sliced
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 teaspoon smoked paprika

- 1/2 teaspoon ground coriander
- Salt and pepper, to taste
- 1/4 cup fresh parsley leaves, chopped

- Heat oil in a large skillet over medium-high heat.
- Add the sliced chorizo and cook until browned, stirring occasionally for 5-7 minutes.
- Remove the chorizo from the skillet and set aside.
- Add the onions and bell peppers to the skillet and cook until they are softened, stirring occasionally for 5-7 minutes.
- Return the chorizo to the skillet and add smoked paprika, chili powder, coriander, salt and pepper. Stir well.
- Cook for an additional 2-3 minutes, until the spices are fragrant.
- Remove from heat, add the chopped parsley and stir well. Serve hot.
