This savory chicken and sausage stew is perfect for the cold winter nights. Here are the ingredients needed:
- 1 1/2 pound of boneless, skinless chicken thighs
- 1/2 pound of Italian sausage, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 can of diced tomatoes
- 4 cups of chicken broth
- 1 teaspoon of dried thyme
- 1/2 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
To make the dish, heat some oil in a large pot and cook the chicken and sausage until browned. Remove from the pot and add in onions, garlic, carrots, and celery. Cook until tender then add the chicken and sausage back to the pot. Add in the tomatoes, chicken broth, thyme, paprika, salt, and black pepper. Bring to a boil then reduce heat and let simmer for 45 minutes.
Roasted Vegetable Lasagna
This roasted vegetable lasagna is perfect for those looking for a vegetarian option. Here are the ingredients needed:
- 1 eggplant, sliced
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow squash, sliced
- 8 lasagna noodles
- 1 jar of marinara sauce
- 1 cup of ricotta cheese
- 1/2 cup of parmesan cheese
- 1/4 cup of basil, chopped
- salt and pepper, to taste
Preheat the oven to 400 degrees F. Place the eggplant, zucchini, red bell pepper, and yellow squash on a baking sheet and drizzle with olive oil. Roast for 20 minutes or until tender. Cook the lasagna noodles according to package instructions.
In a separate bowl, mix together the ricotta, parmesan, basil, salt, and pepper. In a 9×13 inch baking dish, spread a thin layer of marinara sauce and then lay out 4 lasagna noodles. Add another layer of marinara, followed by half of the roasted vegetables and half of the cheese mixture. Repeat the layers and bake in the oven for 35 minutes.
