Oh boy, do I have a treat for you all today! I stumbled upon these two delicious-looking recipes and just had to share them with my fellow food lovers. The first one is a sausage curry recipe that I guarantee will knock your socks off.
Let’s start with the ingredients:
– 1 lb. of sausage (I recommend using a spicy kind for an extra kick!)
– 1 diced onion
– 2 minced garlic cloves
– 1 minced jalapeño (or more if you like it really spicy)
– 2 tbsp. of curry powder
– 1 can of diced tomatoes
– 1 can of chickpeas
– 1 can of coconut milk
– Salt and pepper to taste
– Fresh cilantro for garnish
First, you’ll want to brown the sausage in a large skillet over medium-high heat. Once it’s cooked through, remove it from the skillet and set it aside. In the same skillet, add a little bit of oil and sauté the onion, garlic, and jalapeño until they’re softened. Add in the curry powder and cook for another minute or so, until it’s fragrant.
Next, add in the diced tomatoes (juices included), chickpeas, and coconut milk. Stir it all together and bring it to a simmer. Let it cook for about 10 minutes, until it’s slightly thickened. Finally, add the sausage back in and let everything cook together for another 5-10 minutes. Taste it and add salt and pepper as needed. Serve it over rice and top with fresh cilantro. Yum!
The second recipe I found is for all my breakfast lovers out there. It’s a bacon and egg breakfast bake. Check out these mouth-watering ingredients:
– 1 lb. of bacon
– 10 eggs
– 1 cup of milk
– 1/2 cup of grated cheddar cheese
– Salt and pepper to taste
– Sliced green onions for garnish
To start, cook the bacon until crispy and set it aside to cool. Beat the eggs in a bowl and add in the milk, cheddar cheese, salt, and pepper. Crumble the cooled bacon and stir it into the egg mixture. Pour everything into a greased baking dish and bake it at 350°F for 35-40 minutes, or until it’s set in the middle.
Once it’s done, garnish it with the sliced green onions and dig in! It’s the perfect savory breakfast that will keep you full and satisfied all morning long.
