Seafood and Eggplant Dressing
First up, we have a Seafood and Eggplant Dressing recipe from Deep South Dish. Now, I’ve never paired eggplant with seafood before but this recipe has me intrigued. Here’s what you’ll need:
- 1 large eggplant, peeled and chopped
- 1 pound of shrimp, peeled and deveined
- 1/2 pound of crab meat
- 1/2 cup of butter
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 4 cloves of garlic, minced
- 3 cups of chicken broth
- 1 teaspoon of Cajun seasoning
- 1 teaspoon of dried thyme
- 1 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of breadcrumbs
Start off by sautéing the eggplant with some butter until it’s tender. Remove it from the pan and set it aside. In the same pan, sauté the shrimp and crab until they’re cooked through and set them aside as well. In another pan, melt the rest of the butter and add the onion, bell pepper, and garlic. Cook until everything is tender and throw in the broth and seasonings. Let it simmer for about 10 minutes and then stir in your breadcrumbs, eggplant, and seafood. Put everything in a baking dish and bake at 375°F for 25-30 minutes. Voilà! You’ve got yourself an amazing seafood dressing.
Quick Seafood Cocktail Dressing
Next up, we have a Quick Seafood Cocktail Dressing recipe that’s perfect for those days when you want something delicious but don’t have a lot of time. Here’s what you’ll need:
- 1/2 cup of ketchup
- 1/4 cup of prepared horseradish
- 1/4 cup of lemon juice
- 1 tablespoon of Worcestershire sauce
- 1/4 teaspoon of hot sauce (or more if you like it spicy)
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 pound of cooked, chilled shrimp
