Seafood Empanadas
Ingredients:
- 1 package of empanada dough
- 1/2 pound of shrimp, peeled and deveined
- 1/2 pound of scallops, diced
- 1/2 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tomato, diced
- 1 tablespoon of olive oil
- 1 tablespoon of paprika
- 1 teaspoon of cumin
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- In a frying pan, heat the olive oil over medium-high heat.
- Add the onion and garlic, and sauté for 2-3 minutes until the onion is translucent.
- Add the shrimp and scallops, and cook for 3-4 minutes until they are almost fully cooked.
- Add the paprika, cumin, salt, and pepper, and stir to combine. Remove from heat.
- On a floured surface, roll out the empanada dough and cut it into circles.
- Place a spoonful of the seafood mixture in the center of each circle.
- Wet the edges of the dough with water and fold it in half, crimping the edges to seal.
- Place the empanadas on a baking sheet and brush the tops with a beaten egg.
