Ingredients:

  • 1 package of empanada dough
  • 1/2 pound of shrimp, peeled and deveined
  • 1/2 pound of scallops, diced
  • 1/2 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tomato, diced
  • 1 tablespoon of olive oil
  • 1 tablespoon of paprika
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a frying pan, heat the olive oil over medium-high heat.
  3. Add the onion and garlic, and sauté for 2-3 minutes until the onion is translucent.
  4. Add the shrimp and scallops, and cook for 3-4 minutes until they are almost fully cooked.
  5. Add the paprika, cumin, salt, and pepper, and stir to combine. Remove from heat.
  6. On a floured surface, roll out the empanada dough and cut it into circles.
  7. Place a spoonful of the seafood mixture in the center of each circle.
  8. Wet the edges of the dough with water and fold it in half, crimping the edges to seal.
  9. Place the empanadas on a baking sheet and brush the tops with a beaten egg.
  10. Bake in the preheated oven for 20-25 minutes until golden brown.
  11. Enjoy hot!
