This week, we’ve tried some new recipes and wanted to share one of our favorites with you all. It’s a seafood dish that’s perfect for beginners. We found this recipe on a website and made a few tweaks to it to our liking.
Seafood Eats
Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 1 lb clams, cleaned
- 3 cloves garlic, minced
- 1/2 onion, diced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 1 tbsp tomato paste
- 1/2 cup chicken broth
- 1/4 cup white wine
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 tbsp fresh parsley, chopped (optional)
Instructions:
- Heat the olive oil in a large pot. Add the garlic, onion, and bell pepper, and cook until softened.
- Add the paprika and thyme. Stir to combine.
- Add the tomato paste, diced tomatoes, chicken broth, and white wine to the pot. Stir to combine all ingredients well.
- Add the shrimp, mussels, and clams to the pot. Cover and cook until the mussels and clams have opened and the shrimp have turned pink, about 8-10 minutes.
- Season with salt and pepper to taste. Garnish with fresh parsley, if desired.
- Serve with fresh bread or over rice.
