Seafood Stew Recipe
Ingredients:
- 1 lb shrimp
- 1 lb scallops
- 1 can diced tomatoes
- 1 onion, chopped
- 1 green pepper, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried basil
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 cups chicken broth
- 1/4 cup butter
- 1/4 cup flour
- 2 cups heavy cream
Instructions:
- In a crock pot, combine the shrimp, scallops, diced tomatoes, onion, green pepper, garlic, thyme, basil, cayenne pepper, salt, pepper, and chicken broth. Stir to combine.
- Cook on high for 3-4 hours or low for 6-8 hours, until the seafood is cooked through.
- About 15 minutes before serving, melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes, until the mixture is golden brown.
- Slowly whisk in the heavy cream and cook for 2-3 minutes, until the mixture has thickened.
- Pour the cream mixture into the crock pot and stir to combine. Cook for an additional 10-15 minutes, until the stew is heated through and the flavors have melded together.
- Serve hot with crusty bread or crackers.
