Ingredients:
-1 lb. medium or large shrimp, peeled and deveined
-1 Tbsp. olive oil
-3 cloves garlic
-2 cups fresh baby spinach leaves
-1/4 cup grated parmesan cheese
-1/4 cup heavy cream
-1/4 tsp. salt
-1/4 tsp. black pepper
1. Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds.
2. Add shrimp and cook until they turn pink. Remove shrimp from skillet and set aside.
3. In the same skillet, add spinach and stir until wilted.
4. Add parmesan cheese, heavy cream, salt, and pepper. Stir until cheese is melted and sauce thickens.
5. Add shrimp back to the skillet and cook for an additional minute or until heated through.
6. Serve immediately over pasta or with crusty bread.

-4 salmon fillets
-2 Tbsp. olive oil
-2 Tbsp. fresh lemon juice

-1 Tbsp. fresh thyme, chopped
-4 garlic cloves, minced
-Salt and pepper to taste
1. Combine olive oil, lemon juice, parsley, rosemary, thyme, garlic, salt, and pepper in a bowl.
2. Place salmon fillets in a large resealable plastic bag and pour the marinade over the fillets. Seal the bag and refrigerate for at least 30 minutes.
3. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
4. Remove salmon from the marinade and place on the prepared baking sheet. Discard the marinade.
5. Bake for 12-15 minutes or until the internal temperature of the salmon reaches 145 degrees F.
6. Serve immediately.

-1 Tbsp. olive oil

-1 cup broccoli florets
-2 Tbsp. low-sodium soy sauce
-1 Tbsp. honey
-1 tsp. cornstarch
-1/4 tsp. red pepper flakes (optional)
1. Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds.
2. Add shrimp and cook until they turn pink. Remove shrimp from skillet and set aside.
3. In the same skillet, add snow peas and broccoli. Stir until vegetables are tender.
4. In a small bowl, whisk together soy sauce, honey, cornstarch, and red pepper flakes (if using).
5. Add shrimp back to the skillet and pour the sauce over the shrimp and vegetables. Stir until sauce thickens and everything is coated.
6. Serve immediately over rice or quinoa.
