Shepherd’s Pie is a traditional Irish dish made with minced meat, vegetables, and topped with mashed potatoes. This delicious savory pie is one of the ultimate comfort foods and perfect for colder months. In this recipe, we’ll be using beef instead of lamb, but feel free to substitute with lamb or even ground turkey.
Ingredients:
For the filling:
- 1 lb ground beef
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 1 tbsp tomato paste
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 cup frozen peas
- Salt and pepper to taste
For the mashed potato topping:
- 2 lbs Yukon Gold potatoes, peeled and cubed
- 4 tbsp unsalted butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned and cooked through. Drain excess fat and set aside.
- In the same skillet, cook the onion and garlic until softened, about 3-4 minutes.
- Add the carrots and cook until slightly softened, about 5 minutes.
- Add the tomato paste, beef broth, Worcestershire sauce, thyme, and rosemary. Stir until well combined.
- Simmer for 5 minutes or until the sauce has thickened.
- Add the frozen peas and cooked ground beef. Stir until well combined and season with salt and pepper to taste.
- While the filling is cooking, boil the cubed potatoes until tender, about 15 minutes. Drain well and return to the pot.
- Add butter, milk, salt, and pepper to the potatoes and mash until smooth and creamy.
- Spread the filling into an 8×8 inch baking dish and cover with the mashed potatoes.
- Bake for 30-35 minutes, or until the top is golden brown and heated through.
