Mashed Cauliflower Shepherd’s Pie

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 cup frozen peas
- 1 cup beef broth
- 2 tbsp tomato paste
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- 1 head cauliflower, chopped
- 2 tbsp unsalted butter
- 1/4 cup heavy cream
- 1/4 cup grated parmesan cheese

- Preheat the oven to 375°F.
- In a large skillet, brown the ground beef over medium-high heat until fully cooked. Drain the fat and set the beef aside.
- In the same skillet, sauté the onions and garlic over medium heat until the onions are translucent.

- Add the beef back to the skillet along with the peas, beef broth, tomato paste, thyme, rosemary, and salt and pepper to taste. Cook until the sauce thickens, about 10-15 minutes.
- In a separate pot, steam the chopped cauliflower until tender.
- Using a potato masher or immersion blender, mash the cauliflower until it’s the consistency of mashed potatoes. Add in the butter, heavy cream, and parmesan cheese and stir until everything is well-combined.
- Pour the beef mixture into a 9×13 baking dish and spread the mashed cauliflower on top.
- Bake for 20-25 minutes or until the top is golden brown and everything is heated through.
