As we approach the colder months, nothing says warm and hearty quite like a delicious shepherd’s pie. And when you have some leftover chicken or turkey, there’s no better way to use it up than in a chicken shepherd’s pie. Here’s my take on this classic comfort dish.
First things first, we need to gather our ingredients. For the filling, you’ll need:
– 2 tablespoons of olive oil
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 2 carrots, peeled and diced
– 2 celery stalks, diced
– 1 cup of frozen peas
– 4 cups of shredded cooked chicken or turkey
– 2 tablespoons of tomato paste
– 1 teaspoon of dried thyme
– 1 teaspoon of dried rosemary
– 1 bay leaf
– Salt and pepper
– 1 cup of chicken broth
– 2 tablespoons of cornstarch, mixed with 2 tablespoons of water
– Mashed potatoes, enough to cover the filling
For the mashed potatoes, you can make them from scratch or use leftover mashed potatoes. You’ll need enough to cover the filling in your baking dish.
Now that we have our ingredients, let’s get started. Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, heat the olive oil. Add the onion and garlic and cook until softened, about 5 minutes. Add the carrots and celery and cook for another 5 minutes, until slightly softened. Add the frozen peas and cook for 2 minutes more.
Add the shredded chicken or turkey to the skillet and stir to combine with the vegetables. Add the tomato paste, thyme, rosemary, bay leaf, salt, and pepper and stir to combine. Add the chicken broth and bring the mixture to a simmer.
Stir in the cornstarch and water mixture and cook for 2-3 minutes, until the filling has thickened.
Transfer the filling to a 9-inch baking dish. Spread the mashed potatoes over the top of the filling, making sure to cover it completely.
Bake the chicken shepherd’s pie for 35-40 minutes, until the mashed potatoes are golden brown and the filling is bubbling.
