Hey y’all, have y’all ever heard of Shepherd’s Pie? I recently tried it and it’s just as good as it sounds! I even found a couple of different recipes to share with y’all today. Both recipes have green beans in ’em too, so they’re healthy right? Let’s get cookin’!
Shepherd’s Pie with Green Beans & Mushrooms
Ingredients:
- 1 1/2 pounds ground beef
- 2 cloves garlic, minced
- 1 onion, diced
- 2 carrots, peeled and diced
- 1/2 cup diced mushrooms
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pounds potatoes, peeled and diced
- 1/2 cup milk
- 1/4 cup butter, cubed
- 1/2 cup grated cheddar cheese
- 1/2 pound green beans, trimmed
Instructions:
- Preheat oven to 400 degrees F.
- In a large skillet over medium-high heat, cook ground beef until browned, about 5-7 minutes. Drain and set aside.
- Add garlic, onion, carrots, and mushrooms to the same skillet and cook until tender, about 5-7 minutes.
- Add ground beef, peas, corn, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper to the skillet. Cook for an additional 5-7 minutes, or until heated through.
- In a separate pot, cover potatoes with water and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and mash with milk, butter, and cheddar cheese. Set aside.
- In a separate pot, blanch green beans for 2-3 minutes. Drain and set aside.
- Pour ground beef mixture into a 9×13 inch baking dish. Top with mashed potatoes and spread evenly. Arrange green beans on top of the mashed potatoes.
- Bake for 20-25 minutes, or until the top is golden brown.
Green Bean Casserole Shepherd’s Pie
Ingredients:
- 1 pound ground beef
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 1 can cream of mushroom soup
- 2 cups French fried onions
- 1 cup milk
- 1/2 cup sour cream
- 2 cans green beans, drained
- 4 cups mashed potatoes
Instructions:
- Preheat oven to 350 degrees F.
- In a large skillet over medium-high heat, cook ground beef until browned, about 5-7 minutes. Drain and set aside.
- In the same skillet, melt butter over medium heat. Add onion and garlic and cook until tender, about 5-7 minutes. Add salt, black pepper, paprika, cumin, and cayenne pepper. Stir to combine.
- Add cream of mushroom soup, 1 cup French fried onions, milk, and sour cream to the skillet. Stir to combine and cook for an additional 5-7 minutes, or until heated through.
- Spread green beans in a 9×13 inch baking dish. Pour beef mixture over the top and spread evenly. Top with mashed potatoes.
- Bake for 20-25 minutes, or until the top is golden brown and bubbly. Top with remaining French fried onions and bake for an additional 5-10 minutes, or until crispy.
