Ingredients:
- 2 tablespoons olive oil
- 1 onion chopped
- 2 carrots peeled and chopped
- 2 cloves garlic, minced
- 500g ground lamb
- 1 tablespoon tomato paste
- 1/2 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups frozen peas
- 500g mashed potatoes
- 2 tablespoons butter
- 1/4 cup milk
Instructions:
- Preheat your oven to 200C. Heat olive oil in a large skillet over medium-high heat. Add onions and carrots and sauté for 5-6 minutes or until soft.
- Add garlic and ground lamb and cook until browned, stirring occasionally, for about 5 minutes. Drain any excess fat.
- Add the tomato paste and beef broth. Season with salt and black pepper and stir to combine. Bring to a simmer and cook until the mixture thickens, about 10 minutes.
- Add frozen peas and stir to combine. Remove from heat.
- Combine mashed potatoes, butter, and milk in a separate bowl. Season with salt and black pepper and stir to combine.
- Transfer the lamb mixture to a 9×13 inch baking dish. Spread evenly.
- Top with the mashed potatoes, spreading evenly.
- Bake for 25-30 minutes or until the potatoes are golden brown.
