  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste

  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and garlic, stirring and cooking until onion is translucent.
  4. Add cherry tomatoes and spinach, continue cooking until spinach is wilted.
  5. In a separate bowl, whisk together eggs, milk, shredded cheese, salt, and pepper.
  6. Pour the egg mixture over the vegetables in the skillet, stirring gently to combine.
  7. Cook the frittata on the stove for 2 minutes.
  8. Transfer skillet to the oven and bake for 15-20 minutes or until frittata is golden brown and cooked through.
