First up, we have Tofu Satay Kebabs. These kebabs are perfect for your next BBQ or picnic. They are packed with flavor and are super easy to make. To start, you will need to gather the following ingredients:
– 1 package of firm tofu, drained and pressed
– 1 red bell pepper, cut into 1-inch pieces
– 1 green bell pepper, cut into 1-inch pieces
– 1 small red onion, cut into 1-inch pieces
– 1/4 cup soy sauce
– 2 tablespoons maple syrup
– 2 tablespoons peanut butter
– 1 tablespoon rice vinegar
– 1 tablespoon chili garlic sauce
– 1 tablespoon chopped fresh cilantro
– 1 clove of garlic, minced
– Salt and pepper, to taste
– Wooden skewers, soaked in water for at least 30 minutes
To make the satay sauce, combine the soy sauce, maple syrup, peanut butter, rice vinegar, chili garlic sauce, cilantro, garlic, salt, and pepper in a bowl. Mix until well combined.
Next, cut the tofu into 1-inch cubes and thread them onto the skewers, alternating with the bell pepper and red onion pieces. Brush the satay sauce onto the skewers, making sure to coat them evenly.
Preheat your grill to high heat. Grill the skewers for 10-12 minutes, turning occasionally, until the tofu and vegetables are lightly charred and cooked through. Serve the kebabs hot with any remaining satay sauce on the side.
Next up, we have a delicious and nutritious Tofu Scramble. This dish is a great alternative to scrambled eggs and is perfect for a quick and easy breakfast or lunch. To make the tofu scramble, you will need:
– 1 package of firm tofu, drained and crumbled
– 1 tablespoon olive oil
– 1 small onion, chopped
– 1 red bell pepper, chopped
– 1 clove of garlic, minced
– 1 teaspoon ground cumin
– 1/2 teaspoon smoked paprika
– Salt and pepper, to taste
– Chopped fresh parsley, for garnish
Heat the olive oil in a large skillet over medium-high heat. Add the onion and red bell pepper and sauté for 5-7 minutes, until the vegetables are tender and lightly browned.
Add the garlic, cumin, and smoked paprika to the skillet and sauté for an additional 2-3 minutes, until fragrant.
Add the crumbled tofu to the skillet and continue to cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and lightly browned. Season the tofu with salt and pepper, to taste.
Garnish the tofu scramble with fresh parsley and serve hot with your favorite toast or English muffin.
