– 14oz (400g) extra-firm tofu
– 1 cup (150g) pineapple chunks
– 1 red bell pepper
– 1 green bell pepper
– 1 onion
– 3 cloves garlic
– 2 tbsp. oil
– 1/4 cup (60mL) vinegar
– 1/4 (50g) cup brown sugar
– 1 tbsp. soy sauce
– 1 tbsp. cornstarch
– 1 tbsp. water
– Salt and pepper to taste
– Cooked rice to serve

Instructions:

1. Cut the tofu into 1/2-inch (1cm) cubes and toss with salt and pepper to season.

2. Heat oil in a large pan and add the tofu. Cook for 3-4 minutes until the tofu is golden brown.

3. Add diced onion and minced garlic to the pan and cook until fragrant.

4. While the onion and garlic are cooking, mix together the vinegar, brown sugar, and soy sauce in a bowl.

5. Add the diced bell peppers to the pan and cook for 2 minutes.

6. Pour the sauce over the vegetables and tofu in the pan. Add the pineapple chunks and bring to a simmer.

7. In a small bowl, whisk together the cornstarch and water until smooth. Pour this mixture into the pan and stir until the sauce thickens.

8. Serve hot over cooked rice.

1. Cut the tofu into 1/2-inch (1cm) cubes and set aside.

2. Peel and slice the garlic cloves and thinly slice the onion.

3. Heat oil in a large pan and add the garlic and onion. Cook until fragrant.

4. Add the tofu to the pan and brown on all sides.

5. In a small bowl, mix together the soy sauce, vinegar, and brown sugar.

6. Pour the mixture over the tofu in the pan. Add the bay leaves and peppercorns.

7. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.

8. Serve hot over cooked rice.
