Ingredients
Now, let’s talk about the ingredients you’ll need:
- 1 package of silken tofu (14 oz)
- 3 eggs
- 1 tsp potato starch or cornstarch
- 1/2 tsp salt
- 1/2 tsp soy sauce
- 1/2 cup dashi stock (or chicken stock)
- 1/2 tsp sugar
- 1 tsp sake
- 1 tsp mirin
Instructions
Preheat your oven to 350°F. Let’s get started with the recipe, shall we?
- Crack the eggs into a bowl and lightly beat them.
- Add the potato or cornstarch, salt, soy sauce, and dashi or chicken stock to the eggs and mix well.
- Add the silken tofu and gently mix it into the egg mixture. Be careful not to break the tofu.
- Strain the mixture through a fine strainer to remove any lumps.
- Grease a deep dish or small ramekin with oil.
- Pour the mixture into the dish and cover with foil.
- Place the dish into a larger pan and fill the larger pan with water so that it comes halfway up the sides of the smaller dish or ramekin.
- Bake for 25-30 minutes or until set.
- While the egg tofu is baking, let’s make the sauce.
- In a saucepan, mix together the sugar, sake, mirin, and dashi or chicken stock.
- Cook over medium heat until the sugar dissolves.
- Remove from heat and let it cool.
- When the egg tofu is done, let it cool for a few minutes before removing it from the dish or ramekin.
- Drizzle the sauce on top of the egg tofu and garnish with sliced green onions or cilantro, if desired.
