Good morning everyone! Today, I want to share with you my favorite tofu breakfast scramble recipe that is filling, nutritious, and simply scrumptious!
First, let’s start with the ingredients you’ll need:
– 1 block of firm tofu
– 1 tablespoon olive oil
– 1/2 onion, diced
– 1/2 red pepper, diced
– 1/2 green pepper, diced
– 1 teaspoon turmeric
– Salt and pepper to taste
– Optional: spinach, mushrooms, vegan cheese
To begin, heat the olive oil in a skillet over medium-high heat. Add the diced onion and sauté for a few minutes until translucent. Then, add in the diced red and green peppers and continue to sauté until they are soft.
Next, take your block of firm tofu and crumble it into the skillet with the sautéed vegetables. Mix everything together until the tofu starts to turn slightly yellow from the turmeric. Don’t be afraid to use your hands to get everything well mixed together!
At this point, feel free to add in any additional veggies or vegan cheese that you desire. I personally love throwing in some spinach and sliced mushrooms for extra flavor and nutrition.
Once everything is mixed together, let the scramble cook for a few more minutes until the tofu is heated through. Add salt and pepper to taste.
Now onto the fun part – presentation! Grab your favorite plate and serve up a generous portion of the tofu breakfast scramble. Don’t forget to add some garnish like fresh herbs or sliced avocado to elevate the dish.
