Hoisin Glazed Grilled Tofu and Asparagus
Here’s what you’ll need:
- 1 block extra-firm tofu, drained and pressed
- 1/2 lb asparagus, trimmed
- 1 tbsp olive oil
- 2 tbsp hoisin sauce
- 1/2 tsp Sriracha
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
- Cut the tofu into 1-inch cubes and toss with 1 tbsp olive oil and salt and pepper
- In a small bowl, stir together the hoisin sauce, Sriracha, and garlic
- Heat your grill to medium-high heat
- Thread the tofu and asparagus onto skewers
- Brush the hoisin glaze onto the skewers and grill for 10-12 minutes, turning occasionally, until the tofu is crispy and the asparagus is charred
Tofu and Cashew Stir Fry
Here’s what you’ll need:
- 1 block extra-firm tofu, drained and pressed
- 1 bell pepper, sliced
- 1/2 cup cashews, roughly chopped
- 1/2 red onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 tbsp soy sauce
- 1 tbsp honey or agave nectar
- 1 tbsp cornstarch
- 1/4 cup vegetable broth
- 2 tbsp sesame oil
- Salt and pepper, to taste
Instructions:
- Cut the tofu into 1-inch cubes and toss with cornstarch, salt, and pepper
- Heat 2 tbsp sesame oil in a large skillet over medium-high heat
- Add the tofu and cook until browned on all sides, about 5-7 minutes
- Remove the tofu from the skillet and set aside
- Add the bell pepper and onion to the skillet and cook until softened, about 3-5 minutes
- Add the garlic and ginger and cook for another minute
- Stir together the soy sauce, honey, and vegetable broth and pour into the skillet
- Bring to a simmer and let cook for a few minutes until the sauce thickens
- Stir in the cashews and tofu and serve over rice or quinoa
