Stuffed Butternut Squash
Ingredients:
- 1 medium butternut squash, halved and seeded
- 1 tablespoon olive oil
- 1/2 cup uncooked quinoa
- 1 cup vegetable broth
- 1 can black beans, drained and rinsed
- 3/4 cup corn kernels
- 1/2 cup diced red bell pepper
- 1/4 cup finely chopped cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded vegan cheddar cheese
Instructions:
- Preheat your oven to 400°F.
- Place the butternut squash halves on a baking sheet, cut side up. Brush with olive oil and season with salt and black pepper. Roast for 45-50 minutes, or until the squash is tender and lightly browned.
- In the meantime, rinse the quinoa in a fine-mesh sieve and place it in a medium saucepan with the vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the quinoa is fluffy and the liquid is absorbed.
