Hey y’all! Fall is just around the corner and I have the perfect recipe for those chilly nights – Butternut Squash Apple Soup! This easy and delicious recipe will warm you from the inside out. Plus, it’s dairy-free for my lactose intolerant friends. Let’s get cookin’!
Ingredients:
– 1 large butternut squash
– 2 apples
– 1 onion
– 2 cloves of garlic
– 4 cups of vegetable broth
– 1 tsp of cinnamon
– Salt and pepper to taste
– 2 tbsp of olive oil
Instructions:
1. Preheat your oven to 375°F.
2. Cut the butternut squash in half and scoop out the seeds. Place the squash halves cut side down on a baking sheet and roast for 45-50 minutes or until the flesh is fork-tender.
3. While the squash is roasting, peel and chop the onion and apples. Mince the garlic.
4. Heat 2 tbsp of olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent. Add the minced garlic and cook for another minute.
5. Add the chopped apples, cinnamon, salt, and pepper to the pot. Cook until the apples are softened.
6. Scoop out the roasted butternut squash flesh and add it to the pot. Pour in the vegetable broth and bring the soup to a simmer.
7. Use an immersion blender or transfer the soup to a blender in batches to puree until smooth.
8. Serve hot and enjoy!
